1) Name for me your favorite child-friendly outdoor pesticide. We sprayed the back yard several weeks ago, but due to rain etc., the fleas and ticks may already have come back.
2) How about some easy recipes using ground beef? I'm getting tired of cooking chicken all the time, and nothing in my refrigerator has sounded good to me this week.

To answer your questions:
1. Andrew was a pretty good child-friendly pesticide in his younger years. At least as long as the pests in question were those fat grasshoppers we would get around the yard and the child in question was Andrew himself.
2. Store-brand beef pasta hamburger helper. The recipe's on the back of the box. Sorry, I don't know many recipes.

Everyone's definition of "easy" is different, but I'll give it a try. :0)
TATER TOT CASSEROLE
Cook one pound of ground beef and drain. Mix with ground beef 1 can of mushroom soup and 1 can of cheddar cheese soup. Pour into a 9x9 pan. Top with tater tots. Bake 350 degrees, uncovered, 45 minutes or until beef is bubbly around the edges and tots are crispy.
SLOPPY JOE UNDER A BUN
Cook 1.5 pounds of ground beef and drain. Add 1 can of sloppy joe sauce. Pour into a greased 9x13 pan. Top with 2 cups shredded cheese. In a seperate bowl mix together 2 cups biscuit mix, 2 eggs and 1 cup of milk. Pour over meat and cheese mixture. Bake 400 degrees, uncovered, 25 minutes.
MEATBALLS WITH CREAM SAUCE
You can make homemade meatballs, but I prefer to buy the pre-made ones at Wal-Mart. Bake those according to package directions. In a suaucepan melt 2 TBSP butter over medium heat. Stir in 2 TBSP all purpose flour, 1/4 tsp Thyme (don't leave this out - it makes all the difference), salt and pepper. Mix until smooth (I usually use a whisk). Gradually add 14 oz chicken broth and 2/3 cup whipping cream. Bring to a boil. Stir until thickened. You may have to add a tiny bit more flour. It's really pretty to put your meatballs in the center of a platter and surround them with cooked rice. Pour the cream sauce all over the top of the meatballs and rice. Also pretty to garnish is dried parsley flakes.
MEATLOAF
This is the BEST meatloaf recipe that I've ever tried. In a large bowl combine 1.5 pounds of raw ground beef, 1/2 cup chopped onion, 2 garlic cloves - minced, 1/2 cup ketchup, 1 cup bread crumbs (I like the Italian ones), 2 TBSP mustard, 1 tsp worcestershire sauce, pepper, salt, 2 large egg whites, 1 tsp oregano. I usually just use my hands to mix it all up. Spoon mixture into greased muffin cups. Top each with 2 tsp ketchup. Bake at 350 degrees for 25 minutes or until meat thermometer registers 160 degrees.
SWEET AND SOUR MEATBALLS
Again, I just use the pre-made, frozen ones from Wal-Mart. In a crockpot combine the following: meatballs, 9oz apricot preserves, 1 can tomato soup, 1/2 cup vinegar, 1 TBSP mustard, 1/2 cup brown sugar, 1 TBSP soy sauce, 1 can of pineapple chunks or tidbits. Really good served over rice.
BEEF ENCHILADAS
Brown one pound of ground beef and drain. In a saucepan saute 1 cup of chopped onion and 1 garlic clove in 2 TBSP butter until veggies are tender. Once tender add: 16oz chopped can tomatoes, 8oz can tomato sauce, 1 tsp sugar, 1 tsp. cumin, 1/2 tsp salt, 1/2 tsp oregano, 1/2 tsp basil. Bring to a boil, reduce heat and simmer, covered, for 20 minutes. Remove from heat. You will need 12 flour tortillas. In each flour tortilla put a spoonful of meat and a generous sprinkling of grated Monterey Jack Cheese. Roll up and place in 9x13 pan. After all the tortillas are in the pan Blend 1.5 cups of sour cream into the tomato mixture and pour over top. Bake, covered, 350 degrees for 40 minutes or until heated through.
